Mappillai Samba — literally 'bridegroom's rice' — was once fed to grooms before their wedding day to give them strength. Tamil kings ate it before battle. Then white rice arrived, and it nearly disappeared.

Deep red, with a chew and an aroma that supermarket rice forgot how to make. A heirloom variety that came back from a few kilos of saved seed.

How to use

In the kitchen.
